The History of Green Fig and Saltfish

The dish dates back to St. Lucia's colonial past, when salted cod was imported from Europe as a cheap source of protein. Meanwhile, bananas were abundant on the island, making them a natural pairing. Today, Green Fig and Saltfish remains a beloved national dish, often served during festivals and celebrations.

How to Make Green Fig and Saltfish

Ingredients:

  • 6 green bananas (green fig)

  • 1/2 pound salted cod (saltfish)

  • 1 medium onion (sliced)

  • 1 tomato (diced)

  • 1 green bell pepper (sliced)

  • 2 cloves garlic (minced)

  • 2 stalks scallion (chopped)

  • 1 tablespoon thyme

  • 2 tablespoons oil

  • Black pepper to taste

  • Lime or lemon juice (optional)

Instructions:

Step 1: Prepare the Saltfish

  1. Soak the salted cod in water overnight to remove excess salt, or boil it for 10–15 minutes.

  2. Once softened, flake the saltfish into small pieces and set aside.

Step 2: Boil the Green Bananas

  1. Cut the ends off the green bananas and make a shallow slit along the peel.

  2. Boil the bananas in salted water for about 15–20 minutes, or until tender.

  3. Once cooked, peel the bananas and set them aside.

Step 3: Cook the Saltfish

  1. Heat oil in a pan and sauté the onion, garlic, bell pepper, tomato, and scallion until fragrant.

  2. Add the flaked saltfish and thyme, stirring well.

  3. Season with black pepper and a squeeze of lime or lemon juice, if desired.

  4. Cook for a few more minutes until everything is combined.

Serving Suggestion:

Green Fig and Saltfish is traditionally served on its own or with a side of cucumber salad, avocado slices, or plantains. It’s a hearty and healthy dish that showcases St. Lucia’s unique flavors.
