Ackee and Saltfish Recipe
Ingredients:
1 can ackee (or fresh ackee, if available)
1/2 pound salted cod (saltfish)
1 medium onion (sliced)
1 medium tomato (chopped)
1 green bell pepper (sliced)
2 cloves garlic (minced)
2 stalks scallion (chopped)
1 teaspoon thyme
1 scotch bonnet pepper (optional, for heat)
2 tablespoons oil
Black pepper to taste
Instructions:
Step 1: Prepare the Saltfish
Soak the salted cod in water overnight to remove excess salt. Alternatively, boil it for 10–15 minutes, then drain and rinse.
Once the saltfish is softened, flake it into small pieces and set aside.
Step 2: Cook the Ackee and Saltfish
Heat oil in a large pan over medium heat.
Sauté the onion, garlic, bell pepper, scallion, and thyme until fragrant.
Add the flaked saltfish and stir well.
Gently fold in the ackee, being careful not to break it up too much.
Season with black pepper and, if desired, add a chopped scotch bonnet pepper for heat.
Cook for a few more minutes until everything is heated through.
